Any recommendations guys? I see many 4K sticks/boxes with Wifi 5 AC only.
But based on my testing with my Wifi6 Android phone, I need something that can handle 600Mbps down.

You might be confusing Megabits and Megabytes.
Streaming 4K from Disney+ doesn't use 600Mbps, there's no way in hell the bitrate of the media is that high.
If you're after those sort of speeds, is gigabit ethernet not an option? I stream from my PC to Shield, both on ethernet, although not that high since I found ~50mbps odd to be completely fine for 1440p 60Hz via Parsec (Moonlight should be similar in performance/quality).
I would look at a WiFi 6 bridge and wire it to the box if fully wired isn't an option.
Ethernet not really an option as my PC is too far away from the living room TV.
Ac 5ghz is fine. There's zero need for ax to stream 4k, local or remote.
