In the current version (11.33), there is a setting "Settings->Video Player->Video Presets->Without preset" which might do what you want. I'm not sure when this option was added since I usually default to 1080p to save my data cap.
Stats for Nerds shows that this option doesn't always give me the "highest" resolution for the video, but instead the "best" resolution for my connection. YMMV.
