For Android TV: TiViMate is good, it has multi stream viewing options (though that is a paid option). I mainly use for my Channels DVR setup (which you can make its output channels into a m3u8 IPTV playlist) is TVIrl or PVR Live to integrate it into the native Live Channels app, which then makes it work better with Google Assistant.
tvOS/iOS is a lot more limited on those options, and the only really good IPTV players are paid apps.

You can not easily use a VPN on the AppleTV, you will need to use it on your router or another device and route the AppleTV traffic through it.
I personally keep away from Apple as they control what you can add etc,often you get free apps for android but you have to pay for in Apple. Some iptv service providers don't release m3u file or their dns, so that will rule them out in Apple TV.
Android is the best device to use IPTV services
If you want to use IPTV services, stay away from Apple. If you want to enjoy the Apple TV experience, I recommend Nvidia Shield.

Android is by far the best platform for IPTV and iptv players.
Tivimate is where your search starts and ends for iptv players.(android, fire os only though)
I don't use iOS myself so not aware of any iptv players for iOS.
