... and it suddenly disappeared and reverted to the old look. I'm currently back on Android 9 and says it's up to date.

If you're talking about the new Android TV UI, then it may be that you were using a VPN set to the US, UK, France or Germany, because it's still rolling out very slowly to the entire planet.
