Both Netflix and Amazon Prime Video have shuffle buttons for their content which are accessed within the app, I'm uncertain whether that functionality is available to Google Now though.
If you have your own media then Kodi/SBMC & Plex can shuffle too, there's an add-on for this which can tie in with Google Now.
