Are you planning on using an ethernet connection? If you're using Wifi, then forget about ethernet speeds, you'll never use ethernet.
If you're planning on using an ethernet cable, what does your connection speed from the ISP max out at?
If your internet connection maxes out at 150 Mbps or less then a 100 mb ethernet is fine.
Gigabit ethernet (1000) would be useful, but only if you can get that speed from your ISP.
You won't be able to find 10 mbps ethernet (although 10/100 is common). 10 mbps is excruciatingly slow. We don't use it for anything other than printers where I work.
Are you planning on playing 4k Remux files with Plex, Emby or Kodi over the network? If not you will get by with just wifi 95% of the time. 100Mbps ethernet will be perfectly fine.
Many on this sub won’t agree, but please take the time to inform yourself here. It is far better to have 1,000mbit ethernet and not need it, than to need it and not have it.

You are always limited by your weakest link. So additionally, use Cat 6 cables.
When it comes to streaming, anything 100 or more is good enough. The idea is you will want your Ethernet to be at least as fast as your Net connection to your house.
You won't find many devices with gigabit ports because you won't need them anytime soon. Nvidia Shield TV is about the only one I know of and it's used more for copying files from other storage mediums to local storage. Video playback very rarely needs more than 100 megabits.
If your Internet is faster than 100Mbit you need gigabit Ethernet to take advantage of it.
For media streaming 100 is well more than enough.
