Browser that shows sites in desktop mode?

I’ve tried out both Chrome and Firefox on my NVidia Shield (with wireless keyboard and mouse). They both work pretty well but always show the mobile version of a site if one exists. I’d much rather always load the desktop version, but “request desktop site” does nothing and changing the user agent in Firefox didn’t work either. so clearly there’s something deeper at work.

Has anyone found the magic config flag or other browser entirely that’ll let me browse as if I’m on a desktop machine?

In chrome there's an option to check off "desktop site" in the 3 dots menu at top right. If you don't turn it off, it will stay in desktop mode.

I sideload kiwi browser. Kiwi let you use extensions, so maybe you can install an extension that changes user-agents (device info in the browser) to desktop.
