Hello, I have manually updated to android pie, selected English, all good, after some apps got updated, I tried prime (it works), and then language changed to Korean, I managed to get to the language setting, and changed it to English, nothing happens, English is selected but all remains in Korean, if I return to the language menu, Korean is selected again automatically, any ideas? thanks!
(I already did a factory reset twice and it happens again)
its a bug in the rom, i ran into same issue. i thought it was one of the languages from china.
in CEC there is last option to to auto set the language, disable it. Reset is not needed, Try changing the language a few times and it will set it back. Probably 10-15 times.
How did you update to android pie?
It still happens in the official release for Android 9 Pie. You just have to disable the CEC setting mentioned here.

Try disabling or enabling auto change language in HDMI CEC setting and reboot
