Is there a chance that Android 7.1 or 8.0 or even a fucking security patch will be released for this TV? Sony support said they couldnt provide news on that.

Is there a way I can unlock the bootloader with adb? Want to try to root it.

How would I go about making a custom Android TV rom for this TV? Even if it's just to up the security patch to this year, that'd be nice.

Android TV OEMs don't provide as many updates as even the woeful efforts of android phone OEMs. In addition because TVs are a big ticket low volume item there isn't much of an enthusiast community around hacking them, as there's no critical mass of people with the same model, so there are hardly any bootloader hacks and custom ROMs.
Unfortunately if you want a reasonable chance at getting updates an external box is the only real option. My MiBox has been updated quite a lot with security and platform upgrades, but I don't expect that to last that much longer unless I'm very lucky as new models are released by Xiaomi. Nvidia do very well updating all models of their Shield AFAIK. I don't know much about the other AndroidTV boxes.
